New Project, LCD screens for G25 race sim wheel, help Pls |

Hi everyone
I am building a new race wheel based on a Logitech G25 for online leauge racing. I have finished a non LCD prototype, just to test out shift lights, rotary encoders, buttons etc. Its a fairly rough job (see pic below) but has done its job and alowed me to configure various setups. I have now just made up some rough plans for a similar wheel, but with up to three LCD screens to give various info from the X-Sim plugin. I have tested the basic plugin and got it working fine on the basic 'virtual' test LCD. My problem is I need advice on the best type of LCD to use and a simple plug and play setup if that is possible? I'm not much of an electronics man and anything much above simple soldering of switches/buttons gets beyond me!

Any advice to help me finish this project would be great, just remember I'm a noob and not an electrikery man lol
